Ingredients

  • 4 Sweet Potatoes
  • 2 Cloves Garlic
  • 3 tbsp Olive Oil
  • 1/4 cup Maple Syrup
  • Salt and Pepper
  • Chopped Parsley (for serving)
  • Lemon Wedges (for serving)

Instructions

  1. Wash the sweet potatoes thoroughly and dry them.
  2. Slice them into about 0.5 cm thick slices.
  3. Peel and finely chop the garlic.
  4. Combine olive oil, maple syrup, garlic, salt, and pepper in a medium bowl.
  5. Brush the sweet potato slices with the marinade on both sides.
  6. Grill the slices over medium heat for about 10–12 minutes on each side until soft and lightly browned.
  7. Garnish with chopped parsley and serve with lemon wedges.

Notes

For a make-ahead option, marinate the sweet potatoes up to 2 hours in advance. Can be roasted in the oven at 200°C for 30-40 minutes if grilling is not available.
