Ingredients

  • 500 g mixed vegetables (e.g., carrots, zucchini, bell peppers, broccoli), finely grated or chopped
  • 1 onion, finely chopped
  • 2 garlic cloves, pressed
  • 150 g breadcrumbs
  • 2 eggs (size M)
  • 50 g grated cheese (e.g., Parmesan, Gouda or Emmental, optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon sweet paprika powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Prepare the vegetables: Wash and clean the vegetables thoroughly, then grate or chop them into small pieces. Peel and finely chop the onion, and press the garlic. Wash the fresh herbs, shake them dry and finely chop.
  2. Combine the fritter mixture: In a large bowl, mix the grated vegetables, chopped onion, pressed garlic, breadcrumbs, eggs, cheese (if using), parsley, and chives. Season with paprika, cumin, salt, and pepper. Mix everything thoroughly until well combined. Let the mixture rest for about 15-20 minutes.
  3. Shape the fritters: After resting, knead the mixture again and shape it into even fritters with wet hands. Heat enough oil in a large pan over medium heat.
  4. Fry the fritters: Place the fritters in the hot pan and fry for about 5-7 minutes on each side until golden brown and crispy. Let the finished fritters drain on kitchen paper.

Notes

These fritters can be prepared in advance and stored in the refrigerator for up to 24 hours. You can also bake them in the oven at 180°C for 25-30 minutes.
