Ingredients

Scale
  • 200 g flour
  • 150 g sugar
  • 100 ml plant milk (almond, oat, or soy)
  • 80 ml sunflower oil
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • Natural food dyes (beet juice, spirulina, turmeric, blueberries)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. Mix the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Whisk together the plant milk, oil, vanilla extract, and apple cider vinegar in a separate bowl.
  4. Combine the wet ingredients with the dry ingredients and stir gently until smooth.
  5. Divide the batter into several bowls and add natural food dyes, mixing until colors are well distributed.
  6. Fill the muffin cups alternately with the different batters for a marbled effect.
  7. Bake for 20-25 minutes until golden and a toothpick comes out clean.
  8. Let the cupcakes cool before frosting them with a mixture of vegan butter, powdered sugar, and plant milk, colored with food dyes.

Notes

Store cupcakes in an airtight container in the refrigerator to keep them fresh for up to five days.
