Ingredients

Scale
  • 2 medium Zucchini, grated
  • 200g Feta cheese, crumbled
  • 1 large Egg
  • 100g Breadcrumbs (Panko preferred)
  • Salt and Pepper to taste
  • Garlic powder (optional)
  • Fresh herbs like parsley or dill (optional)
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 180°C (350°F) and prepare the baking sheet with parchment paper.
  2. Grate the zucchini and sprinkle with salt; let sit for 10 minutes to draw out moisture, then drain well.
  3. Combine the drained zucchini with feta, egg, breadcrumbs, and spices in a large mixing bowl; mix well until combined.
  4. Form small balls with a tablespoon and place them on the prepared baking sheet.
  5. Drizzle lightly with olive oil or brush to promote a golden color.
  6. Bake for 25–30 minutes, turning them halfway through for even browning.
  7. Serve hot, optionally with yogurt dip or spicy sauce.

Notes

For a smoother mixture, you can blend the ingredients. These can also be made in an air fryer at 180°C for 15-20 minutes.
