- 9 lasagna noodles
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 2 cups spinach, fresh
- 1 zucchini, sliced
- 1 bell pepper, diced
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Layer three noodles over the sauce.
- Mix the ricotta cheese, spinach, zucchini, bell pepper, Italian seasoning, salt, and pepper in a bowl.
- Spoon half of the ricotta mixture over the noodles.
- Add a third of the mozzarella cheese on top.
- Repeat the layering process, finishing with a layer of noodles and marinara sauce.
- Top with the remaining mozzarella and Parmesan cheese.
- Bake for 30 minutes until bubbly and golden.
- Let it cool for 10 minutes before serving.
