Ingredients

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups spinach, fresh
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Spread a layer of marinara sauce at the bottom of a baking dish.
  4. Layer three noodles over the sauce.
  5. Mix the ricotta cheese, spinach, zucchini, bell pepper, Italian seasoning, salt, and pepper in a bowl.
  6. Spoon half of the ricotta mixture over the noodles.
  7. Add a third of the mozzarella cheese on top.
  8. Repeat the layering process, finishing with a layer of noodles and marinara sauce.
  9. Top with the remaining mozzarella and Parmesan cheese.
  10. Bake for 30 minutes until bubbly and golden.
  11. Let it cool for 10 minutes before serving.

Notes

You can substitute any vegetables based on your preference.
